Wild Rabbit

The staple diet for country people since Norman times, rabbit meat is undervalued and is similar to chicken with a firmer texture and sweeter, milder flavour. Our rabbit is mostly sourced from the Marlborough regions with some coming from Canterbury blocks to supplement our stock.

Wild rabbit is much leaner than the domesticated variety and cooking methods need to compensate for this. Wild rabbit needs slow, gentle cooking.

Rabbit is excellent roasted with sprigs of rosemary, sometimes wrapped with pancetta. The joints can be sautéed and stewed. Fruit such as prunes often accompanies rabbit and it matches many of the traditional sauces for chicken, especially those with garlic, wine and tomatoes, or mustard and cream. Rabbit is great for winter warmer meals such as rabbit pie or rabbit stew. Use ingredients such as bay leaves, lemon zest, bacon, onions, rosemary, garlic and parsley - these all work well in rabbit recipes.
